 Creamy garlic butter salmon is my personal favorite type of dish. The creaminess of the butter is mixed with the garlic with a hint of lemon to create something really amazing. I always use fresh salmon and make sure to sear the skin before adding in the rest of the ingredients to make it extra crispy. It’s also delicious served over rice or quinoa, which makes for an easy meal for any day!

Ingredients for creamy garlic butter salmon

  • 4-6 fillets of fresh salmon.
  • 4 tablespoons of butter.
  • 4 ounces of heavy cream.
  • 1 garlic clove, minced.
  • Zest and juice from one lemon.

Steps for creamy garlic butter salmon 

Step 1:

Season the salmon fillets with salt and pepper (I prefer sea salt and black pepper). Should be cooked in a saucepan over medium heat. Add in 2 tablespoons of butter, which should be melted by the time the salmon is cooked through. Be careful not to burn the butter or it will start to brown before the salmon is ready. Add in four fillets of salmon, skin side down first (layers from bottom to top are skin, meat, skin, meat). Then add another 2 tablespoons of butter (right above each fillet) and cook for 3-4 minutes or until it’s golden brown on both sides.

Step 2:

Sear the top of each fish fillet until it’s crispy all around. At this point, the fish should be done but make sure to use a thermometer or fork to check.

Step 3:

Add the garlic and lemon zest to the pan and let it cook for another minute. Then, add in 1 cup of heavy cream and bring it to a boil before turning off the heat. Spoon over each salmon fillet and top with lemon juice (and cilantro if desired).

Step 4:

Serve over quinoa or whole grain rice! You can also serve with asparagus or broccoli on the side

Cooking notes for creamy garlic butter salmon

  • Make sure that the butter does not burn, as this will give the salmon a bad taste.
  • Make sure to clean the pan after searing/ cooking for easy cleanup.
  • Feel free to use lemon juice instead of zest and juice from different citrus if you want something different! Citrus works. really well with salmon and gives it an amazing flavor!
  • Serve over quinoa or rice for an easy and delicious meal.
  • Don’t forget to save a little bit for yourself (I know, I always do…).
  • This recipe produces enough salmon for 2-3 people, depending on how many servings you make out of it.

True, for the freshest results use wild-caught or in-season salmon. If using frozen fillets to save time and money, make sure to thaw them out first before cooking!

What if I don’t want salmon?

That’s okay! Try using any type of fish you prefer like tilapia or ahi tuna instead! If you want something vegetarian try making this creamy garlic butter chicken! 

Can I freeze this?

Yes, you can! Let the salmon thaw out on the counter for about 30-40 minutes before cooking. 

Is this something I can make and freeze in advance?

Yes, again, let it thaw completely first, and then add all the ingredients to a freezer bag.  Freezing is best so that it stays crispy. 

How long does it take for the salmon to thaw?

30-40 min is usually about right! In order to thaw it, I usually refrigerate it overnight.
