One pot garlic parmesan pasta is a quick and easy one-pot meal with a few ingredients. It’s super cheesy, garlicky, and has the right amount of tang to balance out the creaminess. Plus it’s super fast to make with pantry staples! You can serve this dish up as a side or pair it with some oven-roasted chicken breasts for dinner.

Ingredients for one pot garlic parmesan pasta

  • 2 tbsp olive oil.
  • Pieces of 2 lb chicken breast, cut into bite-size pieces.
  • 1/2 cup brown sugar.
  • 1/4 cup white vinegar.
  • 2 tbsp soy sauce.
  • -3 cloves garlic, minced.
  • 1 cup heavy cream, divided in half (you can also use half and a half).

Instructions for one pot garlic parmesan pasta

  • In a large bowl or gallon-sized Ziploc bag, combine chicken, 1/4 cup brown sugar, 1/4 cup vinegar, soy sauce, and garlic. The marinade should be allowed to sit for one hour.
  • After an hour has passed, stir the marinade and pour over the chicken in a slow cooker. Pour chicken over top of pasta. Stir in remaining ingredients except for heavy cream and cheese. Cover and cook on low for 3-4 hours, or high for 1-2 hours, or until chicken is cooked through. Stir in half and half.
  • Separate halves from the sauce and sprinkle each with a generous amount of cheese, sour cream, and basil. Toppings such as crushed tortilla chips are optional!
  • Serve warm!
  • For this dish, you can use any type of pasta you’d like! I prefer rigatoni noodles or penne for this dish because they soak up the marinade the most so that’s how I’ve listed them in the ingredients below. Other options are bowties, shells, macaroni (regular pasta), etc…
  • Leftovers will store like any other pasta that’s properly stored in the refrigerator. To reheat, heat on the stovetop or in the microwave and add a little heavy cream if you need it to thicken up.
  • 7. If you plan to eat this dish cold, I would recommend serving it with a salad or veggie sticks on the side to soak up the extra sauce.

Cooking notes for one pot garlic parmesan pasta

  • For the marinade, you can use soy sauce and vinegar if you don’t have brown sugar on hand. Add 1/2-1 tbsp of honey to the mixture instead.
  • If your slow cooker doesn’t get hot enough or if your marinated chicken takes longer than one hour to cook through, feel free to transfer chicken into a cast iron skillet and cook over medium-high heat for 5-10 minutes until browned on both sides and cooked through.
  • Be sure to stir the pasta often at the beginning of cooking so it doesn’t stick together or burn onto the bottom of the slow cooker.
  • If your sauce gets too thick, add more heavy cream as needed to thin it out.
  • If you want a thicker pasta sauce, just add more parmesan cheese and a 5 minute cooking time on low or high will help it thicken up quickly!
  • You can also cook the pasta in the microwave instead of the slow cooker to save time and space in your kitchen. I’ve listed my method below for you!

It’s not necessary but it really depends on how much you love garlic. If you love garlic, I would recommend pairing this dish with a side of Italian green beans and some ranch dressing or ranch veggie sticks!

Can leftovers be kept in the refrigerator for a long time?

For up to 5 days, the leftovers can be kept in the refrigerator. To reheat, microwave for 1-2 minutes or heat on the stovetop over low heat (if using the stovetop, stir constantly). Add a little heavy cream or milk if needed to thicken up!

Can I freeze one pot of garlic parmesan pasta?

Yes! This dish will last in an air-tight freezer bag for 3 months. Thaw overnight in the refrigerator before reheating as directed above.

This dish can be made gluten-free by omitting the soy sauce, substituting gluten-free pasta, and omitting the crushed tortilla chips (and topping with cheese to melt instead)!

How does one pot garlic parmesan pasta differ from macaroni and cheese?

They’re very similar in that they’re both one-pot meals with cheese! Mac and cheese is a little less savory than this recipe so it depends on what flavor profile you’re going for! If you love cheesy pasta dishes, I’d recommend trying my new recipe for loaded baked penne casserole!

I’d recommend a pinch of red pepper flakes for some fresh flavor and maybe some dried oregano if you have it handy.
